Yield: This will make one pie and 6-8 servings

[edit] Ingredients

2 ½

cups rhubarb, chopped

2

eggs, separated

1

cup sugar

2

tablespoons flour

1

tablespoon melted butter

Extra sugar

1

pie shell

[edit] Preparation

Step 1

Beat egg yolk,1 cup of sugar,flour,butter and rhubarb

Step 2

Beat this mixture until it is thick and then add it to the pie shell.

Step 3

Bake at 375F until it is done.

Step 4

Beat egg whites and extra sugar (to taste)

Step 5

Place this mixture on top of pie until lightly browned

I first tried this recipe in a mennonite restaurant and I loved it! I am glad to share a very similar recipe for everyone to consider and I am sure you will enjoy it as well.
