  • 30 grams Walnuts, toasted and coarsely chopped

  • 1 tablespoon Walnut oil
  • 2 tablespoons Olive oil
  • 100 grams Fresh goat cheese
  • 1 null Shallot, finely minced

  • 1 tablespoon Freshly squeezed lemon juice
  • 3 tablespoons Walnut oil

Whisk together 3 tablespoons of walnut oil, lemon juice, minced shallot, salt, and pepper to create the vinaigrette.

Coat each goat cheese round with walnut oil, then dredge in bread crumbs, pressing gently to ensure they adhere.

In a large bowl, combine the salad greens and walnuts. Add enough vinaigrette and toss until well coated. Adjust seasoning if needed.

Divide the salad among two serving plates.

Heat a nonstick skillet over medium heat, then add the olive oil.

Once the olive oil is hot, add the goat cheese rounds to the skillet. Cook until nicely browned.

Carefully turn the goat cheese rounds and cook the other side, being careful not to burn or melt them.

Transfer the cooked goat cheese rounds to the serving plates, placing 2 or 3 on top of each salad. Sprinkle the cheese with freshly ground pepper and garnish with grape wedges.
