Coconut Pound Cake
Ingredients
2 cups all-purpose flour
1 cup sugar
1 cup xylitol
1 stick of butter, softened
1/2 cup melted coconut oil, slightly cooled
1 t vanilla
5 eggs
Preparation

1) Preheat oven to 350 degrees.

2)In a large bowl, using an electric mixing, cream the butter, oil, sugar and xylitol. Add the eggs and vanilla and mix again. Add the flour and mix until combined.

3) Pour into a greased, floured bundt pan.

4) Bake for about 1 hour and 5 minutes or until cooked through.

About
This is a slightly healthy pound cake with just a hint of coconut flavor! This dessert dresses up nicely with ice cream and pecans.
