  • 5 eggs
  • 1/2 cup melted coconut oil
  • 1 teaspoon vanilla
  • 1 stick butter
  • 1 cup sugar
  • 1 cup xylitol
  • 2 cups all-purpose flour

Preheat oven to 350 degrees.

In a large bowl, using an electric mixer, cream the butter, coconut oil, sugar, and xylitol. Add the eggs and vanilla and mix again. Add the flour and mix until combined.

Pour the batter into a greased and floured bundt pan.

Bake for about 1 hour and 5 minutes, or until cooked through.
