- 3/4 cup ginger ale
- 1/2 teaspoon baking soda
- 2/3 cup molasses
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup all purpose flour
- 1 tablespoon ground ginger
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon finely ground black pepper
- 2 large eggs
- 1/4 cup sweet butter
- 1 tablespoon fresh grated ginger

Step 1
Preheat oven to 350 degrees F.
Step 2
Grease and flour an 8-inch square baking pan.
Step 3
Bring the ginger ale to a boil in a medium saucepan over medium heat, stirring occasionally. Remove from heat and stir in baking soda. When the foaming subsides, stir in the molasses, brown sugar, butter, and granulated sugar until the butter melts and sugar is dissolved. In a large bowl, whisk together flour, ground ginger, baking powder, cinnamon, and pepper; set aside.
Step 4
Transfer the ginger ale mixture to the large bowl. Whisk in eggs and grated ginger until combined. Gradually whisk the wet mixture into the flour mixture a little at a time until completely smooth.
Step 5
Transfer batter to the prepared pan and gently tap the pan against the counter 3 or 4 times to dislodge any large air bubbles. Bake until the top of the cake is just firm to touch and a toothpick inserted into the center comes out clean.
