This is an old favorite recipe that has been around for ages! The oil and eggs in the original recipe have been replaced with applesauce and egg beaters to create a low fat version. Frost this cake with Lite Cream Cheese Frosting!

  • 2 cup flour
  • 2 cup sugar
  • 1 cup egg beaters
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cup carrots, shredded
  • 1 small can crushed pineapple, undrained
  • 1/2 cup coconut flakes

Preheat oven to 350 degrees F.

In a mixing bowl, combine flour, sugar, baking soda, cinnamon, and salt.

Add egg beaters, applesauce, and vanilla. Mix well.

Add shredded carrots, crushed pineapple, and coconut flakes. Mix well.

45 minutes or until toothpick comes out clean

Pour batter into a 9x13 inch baking pan (or two 9-inch cake pans) and bake for 45 minutes or until a toothpick inserted into the center comes out clean.

Cool completely.
