- 1 cup milk
- 6 teaspoons sugar
- 2 tablespoons loose leaf Orange Pekoe tea
- 12 cloves
- 1 cinnamon stick
- 6 green cardamom pods
- 1 tablespoon fennel seeds
- 7 cups water
Instructions
Step 1
With a mortar and pestle, slightly grind the cloves, cinnamon stick, green cardamom pods, and fennel seeds; just enough to pop them open to release their flavor and fragrance.
Step 2
Add 6 teaspoons of sugar to the ground spices, combine with water, and bring to a boil. Lower to a simmer, then bring to a boil again. Reduce heat once more, then simmer until the mixture becomes saffron colored.
Step 3
Add the loose leaf Orange Pekoe tea to the water and bring to a boil again. Following the pattern from the previous step, lower to a simmer, then bring to a boil again. Reduce heat once more, then simmer. Repeat this entire sequence (boil, simmer, boil, reduce heat, simmer) one more time. Finally, add the milk and bring to a boil again.
Step 4
Strain the chai into cups and serve. Add more sugar to taste if necessary.
