There is a song about profiteroles: "Profiteroles, exploding taste in your mouth....." And profiteroles are really delicious flavor bursting delicate bites that everyone just love to indulge. I filled mine with instant pudding and they were wonderful

- 3.0 deciliter water
- pinch salt
- 100.0 gram unsalted butter
- 2.0 deciliter all-purpose flour
- 3.0 eggs
- 1.0 cup small packet French vanilla pudding (prepared with 1 milk)
- 1.0 cup small packet chocolate pudding (prepared with 1 milk)
- confectioners' sugar(optional)
Instructions
Step 1
Lightly oil a baking sheet or cover it with parchment paper.
Step 2
Preheat oven to 425°F.
Step 3
In a pot, bring water to boil with a pinch of salt. Add butter and let it melt. Stir in flour and continue to stir until a dough ball forms. Remove from heat, transfer the dough into a non-plastic bowl, and let the dough ball cool down a bit. Stir one egg at a time into the cooked dough, ensuring each egg is completely incorporated before adding the next.

Scoop the dough onto the prepared baking sheet with an ice-cream scoop.
Step 5
Bake on the middle rack for 20 minutes, making sure not to open the oven for the first 10 minutes due to the dough's sensitivity. After 20 minutes, turn the oven down and leave the profiteroles in the oven for an additional 5 minutes to dry out a bit. Pull them out of the oven and let them cool completely before filling.
Step 6
Cut the profiteroles in half, fill them with the prepared pudding, sprinkle with confectioners' sugar, and serve.
