Cucumber Pickles
When you put your cucumbers in brine, put a saucer or something on top to hold the cucumbers under the brine. Cover jar with cloth during the process.

- 12 pounds cucumbers
- 10 pounds sugar
- 1 large box pickling spice
- 1 box powdered alum
- 1 gallon vinegar
Instructions
Step 1
Slice cucumbers and soak them in salt water for 14 days (use enough salt to float an egg). Next, soak them in fresh water overnight. Then soak them in alum water for 12 hours.
Step 2
Rinse off the cucumbers. Heat vinegar to boiling point and pour over the cucumbers. Let stand for 24 hours, then pour the vinegar off. Place a layer of cucumbers and then a layer of sugar and spices, repeating until all are used up, ensuring a layer of sugar and spices is on top. Let stand for 3 days, then pack the cucumbers in a jar. Do NOT put spices in with the cucumbers in the jar. Strain the juice and pour it over the pickles.
