Neah's Fresh Apple Cake

Ingredients

1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 eggs, slightly beaten
3 teaspoons vanilla (divided)
1/2 cup chopped walnuts (optional)
1/4 cup milk

Preparation

Mix together sugar, flour, baking soda, salt, and cinnamon.

Add chopped apples and mix until coated.

Add oil, eggs, 2 tsp. of the vanilla, and nuts (if using).

Pour into ungreased 9X13 inch pan.

Bake at 350F for 60 minutes.

When the cake is done, mix together powdered sugar, 1 tsp. vanilla, and milk to make a thin glaze.

Brush glaze onto the top of the cake and place under broiler for a few minutes until the glaze begins to crackle.

This recipe originally came to my mother from my father's cousin Neah after my parents married. My mother made changes to the recipe (the original called for white flour and more oil) and as an adult I made additional changes (less sugar than the original), so it is truly a family recipe and a work in progress!
