  • 1 1/2 cup sugar
  • 3 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cup peeled, chopped apples
  • 1 cup canola oil
  • 2 eggs, slightly beaten
  • 3 teaspoon vanilla
  • 1/2 cup chopped walnuts(optional)
  • 1 cup powdered sugar
  • 1/4 cup milk

Preheat oven to 350°F.

In a large mixing bowl, mix together sugar, flour, baking soda, salt, and cinnamon.

Add chopped apples to the dry mixture and mix until coated.

Add oil, eggs, 2 teaspoons of the vanilla, and chopped walnuts (if using) to the mixture.

Pour the batter into an ungreased 9x13 inch pan.

Bake at 350°F for 60 minutes.

While the cake is cooling, in a small bowl, mix together powdered sugar, 1 teaspoon of vanilla, and milk to make a thin glaze.

Brush the glaze onto the top of the warm cake. Place the glazed cake under a broiler for a few minutes until the glaze begins to crackle.
