Qataieyf- قطايف
Atayief (or Qatayief ) is the king of sweets in Ramadan and only made during this holy month as the main dessert. Atayief is pancake-like dough filled with all kinds of things, such as milk pudding, full cream, white cheese and walnuts. I got couple of variations for the fillings; one is vanilla caramelized banana and the other is cinnamon apple. I think those are easy to prepare and no need to list the recipe since they are so easy to prepare! You may also fry the qataieyf in hot oil; it should take only few minutes to fry, then repeat the sugar syrup step and serve hot. Of course the main sweetener for most Middle Eastern sweets is Sugar Syrup .

- 3 cup flour
- 3 cup milk
- 1 teaspoon instant yeast
- filling of your choice(optional)
- sugar syrup
- butter
Instructions
Step 1
Mix all ingredients; cover and leave in a warm place for one hour.
Step 2
Pour batter onto a hot pan (just like you do with pancakes) and cook one side. Fill with a mix of walnut and sugar, sweet cheese, or another filling of your choice.
Step 3
Oil a pan and add some butter pieces on top of the Qataieyf and bake in a 350 degrees F oven until crisp and brownish in color.
Step 4
Pour cold sugar syrup on top of it the minute you get it out of the oven.
