Thai Coconut Soup

Ingredients

1 (13 oz.) can coconut milk
1 (13 oz.) can chicken broth
3 stalks lemon grass
2 citrus leaves
6 Thai red chili peppers, diced
3 scallions, diced
2 chicken breasts, boneless, cut into sm. pieces
1 tablespoon red chili pepper sauce
2 tablespoons fish sauce
2 tablespoons fresh lime juice
1/4 cup fresh cilantro, chopped

Preparation

Simmer first 7 ingredients (up to and including raw chicken) for about 15 minutes. Add chili sauce, fish sauce and lime juice. Turn off burner and allow to sit awhile before serving. Add fresh cilantro just before serving.
