- 1/2 cup shortening
- 1 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 mashed ripe bananas
- 1/4 cup buttermilk
- 2 cup all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
Step 1
In a large mixing bowl, sift and combine the flour, baking powder, baking soda, and salt. Set aside.
Step 2
In a separate bowl, beat the shortening and sugar until light and fluffy.
Step 3
Add eggs one at a time, beating for 30 seconds between each addition. Then add the mashed bananas.
Step 4
Add about a fourth of the dry flour mixture to the shortening/sugar mixture and beat to combine.
Step 5
Add about one third of the buttermilk and beat until combined.
Step 6
Repeat the above steps, alternating additions of the remaining dry flour mixture and buttermilk, ending with the flour mixture.
Step 7
Fill 18 paper-lined muffin cups two-thirds full.
Step 8
Preheat your conventional oven to 350 degrees F. If using a turbo broiler, preheat it to 150 degrees. Bake in the conventional oven for 15-20 minutes, or for 15 minutes in a turbo broiler, or until a toothpick inserted into the center of a cupcake comes out clean.
Step 9
Remove the cupcakes to wire racks to cool completely.
