- 1 cup regular long-grain rice
- 2 cups boiling water

In a 2-quart saucepan over high heat, bring the rice, salt, and pepper to a boil in the boiling water. Reduce heat to low; cover and simmer for 20 minutes or until the rice is tender and all liquid is absorbed. Stir in the parsley.
