Tomato rice is an absolute favorite. Total comfort food !!!! Comfort to the taste buds and also comfort to the chef. Simple toss up few ingredients and your good to go .. How To Tomatoes 3 Onion 1 small Cardomom 2 Cloves 2 Cinammon small stick Curry leaves 6-8 Green Chillies 2 chopped long Green peas 1/4 cup boiled Coriander leaves 1/4 a cup Ghee 1tbspn Cumin powder 1/2 tsp Corainder powder 1/2 tsp Red chilli powder 1/2 tsp Ginger garlic paste 1 tsp Cumin seeds 1/2 a tsp Turmeric 1/4 tsp For garnish Raisins 8-10 cashewnuts 5-6 Cook rice to couple of whistles. Add in a tsp of ghee or oil while cooking rice ,so grains will be seperate. Grind 2 tomatoes to a paste. Heat ghee in a pan. Add in cumin seeds, cloves, cardamom,cinammon and fry for a minute. Add onion slices, green chilli, ginger garlic paste and curry leaves saute till onions turn transparent. Now add in the ground tomato paste along with cumin pwd, corainder pwd, red chilli pwd , turmeric and salt.Mix well. Add 1 chopped tomato and boiled peas along with coriander leaves.If this seems too dry add few tbspns of water. Cook this to thick gravy consistency.This should take about 7-10 minutes.Now add in the cooked rice and mix . Close the pan with a lid and cook for few minutes.Remove from stove and garnish with roasted dryfruits of your choice. Enjoy with raita and papad.

  • 7 count Curry leaves
  • 2 count Green Chillies, chopped long

  • 1 tablespoon Ghee (Clarified Butter)
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Red chilli powder
  • 1 teaspoon Ginger garlic paste
  • 1/2 teaspoon Cumin seeds
  • 1/4 teaspoon Turmeric powder
  • 9 count Raisins (for garnish)(optional)
  • 5-6 count Cashews (for garnish)(optional)
  • cup Uncooked rice
  • to taste Salt
  • tablespoon Water(optional)
  • teaspoon Oil(optional)

Instructions

Cook rice to a couple of whistles in a pressure cooker.

Add 1 teaspoon of ghee or oil while cooking the rice to ensure the grains remain separate.

Grind 2 of the tomatoes to a paste.

Heat ghee in a pan.

Add cumin seeds, cloves, cardamom, and cinnamon stick and fry for 1 minute.

until onions turn transparent

Add onion slices, green chili, ginger garlic paste, and curry leaves and sauté until the onions turn transparent.

Now add the ground tomato paste along with cumin powder, coriander powder, red chili powder, turmeric, and salt.

Add the remaining 1 chopped tomato, boiled peas, and coriander leaves. If the mixture seems too dry, add a few tablespoons of water.

Cook this mixture to a thick gravy consistency for about 7-10 minutes.

Now add the cooked rice and mix.
