edit Ingredients

6

strips bacon

1

cup long grain white rice

1

can (10 oz)Tomatoes

1

onion , chopped fine

1

small green pepper , chopped fine

2

cloves garlic , crushed

1

cup chicken broth

½

teaspoon chili powder

1

tablespoon butter

edit Preparation

Step 1

Fry bacon in skillet until browned.

Step 2

Remove from skillet, crumble, and set aside.

Step 3

Do not remove bacon grease from skillet!

Step 4

Melt butter in skillet and add onion, pepper and garlic.

Step 5

Saute until onions are translucent.

Step 6

Add the tomatoes, green chiles and chicken broth and simmer approximately 5-10 minutes.

Step 7

Add the rice, cover and simmer approximately 20 -30 minutes.

Step 8

Crumble bacon on top and serve.

Step 9

Season with chili powder, salt, and pepper.
