- 1 veal kidney
- 1 beef bouillon cube
- 1 cup boiling water
- 2 tablespoons flour
- 1/4 cup cold water
- 1 cup cubed potatoes, cooked
- 1/2 cup sliced carrots, cooked
- 1 small onion, chopped
- salt and pepper(optional)
- small baking powder biscuits or pastry dough(optional)
Instructions
Step 1
Wash the kidney well. Cover with cold water and let stand for about an hour. Drain the kidney, then remove the cords and all of the center fat.
Step 2
Cut the prepared kidney into small pieces. In a saucepan, combine the bouillon cube and boiling water. Add the chopped kidney and simmer for 20 minutes.
Step 3
In a separate bowl, combine the flour and cold water, mixing well until smooth. Add this mixture to the simmering kidney mixture, stirring constantly until thickened and smooth. Stir in the cooked potatoes, cooked carrots, and chopped onion. Season to taste with salt and pepper.
Step 4
Pour the kidney mixture into a baking dish. Cover the top with small baking powder biscuits or pastry dough. Bake at 400F.
