- 1/4 cup sugar
- 1/4 cup water
- 1 tablespoon fresh basil, finely chopped
- 4 large ripe tomatoes, skins removed and seeded
- 2 tablespoons lemon juice
- 1 lemon lemon zest
- 1/4 teaspoon salt
- 1 tablespoon tomato paste

Step 1
In a small saucepan, bring sugar, water, and basil leaves to a boil. Remove from the heat and allow to cool to room temperature.

Place the roughly chopped, skinned, and seeded tomatoes in a blender with the basil simple syrup and puree until smooth.

Add the lemon juice, salt, and tomato paste and blend until incorporated.

Process the mixture in an ice-cream maker according to the manufacturer’s instructions.
