- 2 cups cottage cheese
- 2 tablespoons butter (melted or softened)
- 1 cup thin cream or milk
- 2 tablespoons lemon juice(optional)
- 1 teaspoon grated lemon rind(optional)
- 1 teaspoon vanilla extract(optional)
- 1 cup sugar
- 1 tablespoon flour
- 3 egg yolks
- 1 1/2 cups fine crumbs (such as graham cracker)
- 1/3 cup butter
- 3 tablespoons white or brown sugar

- 1 ounce unsweetened or semisweet chocolate(optional)
Instructions
Step 1
Preheat oven to 350 degrees F.
Step 2
Sieve the cottage cheese or whirl it in a blender until the curds are broken up.
Step 3
Add the butter, cream or milk, chosen flavoring (lemon juice and rind or vanilla extract), sugar, flour, and egg yolks to the cottage cheese mixture. Beat or stir well to blend.
Step 4
For the crumb crust: Place fine crumbs (such as graham cracker crumbs) into a food processor. Melt the 1/3 cup butter over low heat in a saucepan.
Step 5
Remove the melted butter from the heat, then add the crumbs and 3 tablespoons white or brown sugar, and blend well.
Step 6
If using spices or cocoa, add them with the sugar. If using 1 ounce unsweetened or semisweet chocolate, add it after the butter is melted, stirring over very low heat until the chocolate is liquid, then add the crumbs and sugar and blend.
Step 7
Turn the crumb mixture into an 8 or 9 inch pie pan, spreading it evenly and firmly over the bottom and up the sides.
Step 8
Bake the pie crust for 7–10 minutes, depending on its thickness, to firm it.

Cool the crust for a few minutes, then add the cottage cheese pie mixture.

Bake the pie for 35-40 minutes or until a toothpick inserted into the center comes out clean.
