- 0.5 cup rice
- 0.75 cup coconut chutney
- 1 tablespoon coconut oil
- 1 cup water
- 1 carrot
- 1 teaspoon mustard seeds
- 1 green chilli
- 10 curry leaves
- 1 teaspoon oil

Add all the coconut rice ingredients (rice, coconut chutney, coconut oil, and water) in a pot and cook until the rice is done.

Grate the carrot and chop the green chilli finely.

In a small pan, add the oil for the sambal.

Once the oil is heated, add the mustard seeds, curry leaves, and the chopped green chilli.

Temper for one minute, then add the grated carrot.
