Sweet Cashew Popcorn

Last week I whipped up a batch of this delicious popcorn/cashew mix. It came from a recipe I have for a sweet cereal mix. I wanted to see how popcorn and cashews would taste instead of Chex and Crispix cereal. It is so good. I could not stop eating it. I literally ate it until my tummy hurt. But it was worth it. This will definitely be a new addition to our snack table this year (if I don't eat it all first!)

  • 1 10 ounce bag popped popcorn
  • 1 large can cashews
  • 1 stick butter (not margarine)
  • 1 cup brown sugar
  • 1/4 cup lite Karo syrup
  • 1 teaspoon vanilla
  • 1 grocery size paper bag

Instructions

Spray the inside of the paper sack generously with cooking spray.

Pour popcorn and cashews into the sack.

In a heavy sauce pan, bring butter, brown sugar, and Karo syrup to a boil.

5 minutes

Let simmer for 5 minutes.

Remove from heat.

Add vanilla.

Pour syrup over popcorn and cashews in the sack.

Shake the bag.

Microwave for 90 seconds.

Pour onto a greased cookie sheet or waxed paper.
