  • 6 tablespoons Ground Flaxseeds
  • 1/2 cup Warm Water
  • 1/2 cup Oil
  • 1/2 cup Unsweetened Applesauce
  • 2 cups Raw Sugar
  • 1 teaspoon Vanilla
  • 3 medium Zucchinis, grated
  • 3 cups Whole Wheat Pastry Flour
  • 1 teaspoon Salt
  • 1 tablespoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 tablespoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Allspice
  • 1 cup Chocolate Chips

Step 1

Whisk together ground flaxseeds and warm water. Preheat oven to 350F. Grease 2 loaf pans.

In a large bowl, mix together oil, unsweetened applesauce, raw sugar, vanilla, and grated zucchinis until combined.

In a separate bowl, mix together whole wheat pastry flour, salt, baking soda, baking powder, cinnamon, nutmeg, and allspice. Add this dry mixture to the wet ingredients and mix just until combined. Gently stir in chocolate chips and split the batter evenly into the 2 greased loaf pans.

Bake at 350F for about 1 hour or until a fork comes out clean. Cool completely before serving.
