- 2 teaspoons Vanilla
- 2 tablespoons White vinegar
- 2/3 cup Oil
- 2 cups Water
- 1 teaspoon Salt
- 2 teaspoons Baking soda
- 2/3 cup Cocoa
- 2 cups Sugar
- 3 cups Flour
- 1/2 cup Chocolate Chips
- 1 cup Coconut
- 1/8 teaspoon Salt
- 1 Egg
- 1/3 cup Sugar
- 8 ounces Cream cheese, softened
Instructions
Step 1
In a small bowl, beat cream cheese, 1/3 cup sugar, egg, and 1/8 teaspoon salt until smooth and creamy. Stir in 1 cup coconut and 1/2 cup chocolate chips; set aside.
Step 2
Preheat oven to 350°F (175°C). In a large bowl, stir together flour, 2 cups sugar, cocoa, baking soda, and 1 teaspoon salt. Add water, oil, vinegar, and vanilla. Beat on medium speed for 2 minutes. Fill paper-lined or foil-lined muffin tins 2/3 full with chocolate batter. Spoon 1 tablespoon of the prepared filling into the center of each cupcake. Bake for 20-25 minutes.
