Filled Chocolate Cupcakes
In small bowl,beat cream cheese, sugar, egg and salt until smooth and creamy. Stir in coconut and chocolate chips; set aside.
Preheat oven to 350. In large bowl, stir together flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Beat on medium for 2 min. Fill paper lined or foil lined muffin tins 2/3 full with choc batter. Spoon 1 tbsp filling into the center of each cupcake. Bake 20-25 minutes.
