  • 4 cups dry red wine
  • 1 1/2 cups sugar
  • 2 pounds Bing cherries, stemmed, pitted
  • 1/2 teaspoon grated orange peel
  • 1/8 teaspoon whole cloves
  • 1/8 teaspoon ground nutmeg

Step 1

Stir wine and sugar in a heavy large saucepan over medium heat until sugar dissolves. Add cherries, orange peel, cloves and nutmeg and bring to a boil.

25 minutes

Boil until reduced to 2 cups, which takes approximately 25 minutes.

If preserving, spoon equal amounts of cherries into sterilized jars. Then equally divide the liquid and spices amongst the jars. Seal jars and process in a water bath as you would jam. Set jars aside and make sure all lids are sealed.

Step 4

If you are not preserving the cherries, simply cover and chill until cold.
