  • 2 large eggs
  • 3/4 cup white sugar
  • 3 ripe bananas
  • 1/3 cup buttermilk
  • 1 tablespoon vegetable oil
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1/4 cup honey
  • 1/2 cup chopped walnuts
  • 1/2 cup semi-sweet chocolate chips

Preheat oven to 325°F. Butter a loaf pan with a small amount of melted butter and lightly dust with flour. In the bowl of a Kitchen Aid mixer, beat the eggs with the sugar on medium high until thick and light. Add mashed bananas, buttermilk, honey, oil, vanilla, walnuts, remaining butter, and chocolate chips. Mix until combined.

In a separate bowl, mix together all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Add the dry mixture to the wet ingredients and beat until just combined. Transfer the batter to the prepared loaf pan and bake. The bread is done when a tester inserted in the center comes out clean. Let the bread sit for about 10 minutes, then turn it out on a rack to finish cooling.
