Pecan Pie
Ingredients
3 eggs, slightly beaten
1 cup light corn syrup
1 teaspoon vanilla extract
1 1/4 cups pecan halves
2/3 cup sugar
cup butter melted
2 tablespoons flour

Tip: Cover edge of pie crust with aluminum foil for first 25 minutes of bake time, then remove for remaining 20 minutes, to prevent the crust from burning.

I use dark corn syrup....mix all the filling ingredients and heat on the stove top til bubbly. Remove immediately and pour into a blind baked (about 10 minutes) pie crust. Bake until set...aproximately 25 minutes.
The "pre-cooking" thickens the filling so the pecan don't all float to the top. Also, depending how long its baked....the filling can be a little "chewy". Yum
