- 1 can 28 ounces crushed tomatoes
- 2 cups cubed potatoes
- 1 tablespoon vinegar
- 1/2 teaspoon pepper
- 1 tablespoon salt
- 1 pound kale (or 2 10-ounce packages frozen kale)
- 1 pound chorico highly spiced sausage
- 1 large onion, sliced
- 1 stalk chopped celery
- 2 units carrots, peeled and sliced
- 1 cup pea beans
- 7 cups water

Soak the pea beans overnight in cold water.

In the morning, drain the soaked beans.

To a large pot, add the drained beans, sliced onion, chorico sausage (cut into pieces), kale (broken into pieces), salt, pepper, vinegar, and 7 cups of water.

2 to 3 hours
Bring the mixture to a boil, then reduce the heat and cook gently for 2 to 3 hours.

until potatoes are tender
Add the cubed potatoes and 1 additional cup of water. Continue cooking until the potatoes are tender.
