Fried Egg and Asparagus

- 4 eggs
- 1/3 cup Parmesan cheese, freshly shaved(optional)
- 1 pound asparagus
- 2 tablespoons olive oil
Instructions
Step 1
Clean and cut any woody areas off of the asparagus.
Step 2
Place asparagus in a large griddle or skillet side by side, as many as can fit.
Step 3
Drizzle the asparagus with olive oil and cook on high for three minutes. Turn over and cook the other side for the same amount of time.
Step 4
In another greased skillet, crack one egg at a time and fry until cooked on both sides.
Step 5
Serve three asparagus with a fried egg on top.
Step 6
Drizzle with olive oil and a few slithers of Parmesan cheese. The cheese can be omitted if preferred.
