  • 2 cup arugula, torn into pieces
  • 1 cup mandarin orange, sections
  • 8 radishes, thinly sliced
  • 10 black olives, pitted and halved
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper
  • salt
  • pepper
  • Parmigiano-Reggiano cheese(optional)

Instructions

Step 1

In a bowl, whisk together orange juice, lemon juice, olive oil, honey, cinnamon, and cayenne. Season with salt and pepper to taste.

Pour the dressing into a shakeable container and let it sit for at least 20 minutes before serving.

In a large serving bowl, spread the arugula in a single layer.

Next, layer the mandarin orange sections.

Then, layer the thinly sliced radishes.

Top the salad with the pitted and halved black olives.

Before serving, add some of the dressing to the top of the bowl and toss the salad. Serve the salad, passing extra dressing on the side.
