  • 2 cups rolled oats
  • 1 cup walnuts, coarsely chopped
  • 3 fresh mujadool dates, pitted and coarsely chopped
  • 2 teaspoons vanilla powder
  • 1 teaspoon vanilla extract(optional)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/8 cup coconut oil
  • cup oil of your preference(optional)
  • 1/4 cup honey

Preheat oven to 350 degrees F (175 C).

In a mixing bowl, combine the rolled oats, chopped walnuts, vanilla powder (or vanilla extract if using), cinnamon, and salt. Stir these dry ingredients together until well combined.

In a small microwave-safe bowl, combine the coconut oil (or oil of your preference) and honey. Microwave for about 10 seconds, or heat on the stovetop, until both are melted and smooth.

Pour the melted honey and oil mixture over the dry oat mixture in the mixing bowl. Use a spoon to stir thoroughly until all the dry ingredients are evenly coated.

Pour the granola mixture onto a baking sheet. Use the back of a spoon or a spatula to press and form it into a compact rectangle, ensuring the ingredients are not spaced out.

35 to 40 minutes

Bake for 35 to 40 minutes on the center rack of your preheated oven, or until the granola is crispy and golden brown.

Halfway through baking (approximately 17-20 minutes), remove the baking sheet from the oven and use a spatula to mix the granola around. Then, spread it back into a compact layer on the baking sheet to ensure even baking. Return to the oven.

Once baked, remove the granola from the oven and allow it to cool on the baking sheet for at least 10 minutes. This cooling process is crucial for the granola to cluster.

After the granola has cooled, add the coarsely chopped dates and mix them into the granola.

Serve the granola as desired, such as with yogurt, milk, and/or fresh fruit.
