- 225 g self raising flour
- 1 pinch salt
- 55 g butter
- 25 g caster sugar
- 150 ml milk
- 1 teaspoon vanilla essence
- 1/2 teaspoon baking powder
- 2 tablespoons sultanas
- 1 teaspoon cinnamon
Instructions
Step 1
Heat the oven to 220°C/425°F/Gas 7.
Step 2
Mix together the flour, baking powder and salt and rub in the butter.
Step 3
Heat the milk for 20 seconds and add the vanilla essence.
Step 4
Place a baking tray in the oven.
Step 5
Stir in the sugar, cinnamon and sultanas.
Step 6
Add the milk to get a soft dough.
Step 7
Turn on to a floured work surface and knead very lightly.
Step 8
Pat out to a round 2cm/¾in thick.
Step 9
Use a 5cm/2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
Step 10
Brush the tops of the scones with a little milk.
Step 11
Bake for 12-15 minutes until well risen and golden.
