- 110 grams Unsalted butter (4 oz.) at room temperature
- 2/3 cup Soft brown sugar
- 2 Large eggs
- 1/2 cup Sour Cream
- 1 1/2 cups All-purpose flour/ Plain flour
- 1 1/4 teaspoons Baking powder
- 1 Medium Egg White
- 1 teaspoon Lemon juice
- 3/4 cup Icing Sugar/ confectioner’s sugar
- Few drops green food coloring
- Unshelled Pistachios, chopped(optional)
- Flowers and Eggs for decoration(optional)
Instructions
Step 1
Preheat oven to 190 C/ 375 F. Lightly grease a ring cake pan and set aside.
Step 2
In a medium bowl, using an electric mixer, beat soft brown sugar, large eggs, and unsalted butter until creamy.
Step 3
Add sour cream, all-purpose flour, and baking powder, then mix for a couple of minutes until combined.
Step 4
Pour the mixture into the prepared ring cake pan. Bake for 20 minutes or until golden brown and cooked through when tested with a skewer.
Step 5
Let the cake cool on a wire rack for about 10 minutes.
Step 6
While the cake cools, prepare the Royal Icing: Using a standard mixer, beat the medium egg white until soft stiff peaks form. Add lemon juice, icing sugar, and green food coloring. Beat for a couple of seconds more.
Step 7
As soon as the royal icing is made and the cake is sufficiently cool, pour the royal icing/glaze onto the cake. Sprinkle with chopped pistachios (if using) and decorate with flowers and eggs as desired.
