Cauliflower Salad With Toasted Breadcrumbs
This is a simple but very beautiful looking delicious salad. It is prepped ahead (the evening before), so when it's time to serve it, you just need about 10 minutes of cooking time and you can already dig in.

- 1 head cauliflower
- 2 cloves garlic
- pinch salt
- dash black pepper
- sprinkle crushed chili peppers
- 1/8 cup lemon juice
- 1/3 cup olive oil
- 1/3 cup Italian style breadcrumbs
- Parmesan, Asiago, or Romano cheese(optional)
Instructions
Step 1
Remove the leaves from the cauliflower and boil it for 10 minutes in lightly salted boiling water. Transfer the cauliflower from the pot into an ice bath to stop cooking.
Step 2
Using a mortar and pestle, crush the garlic cloves with salt, black pepper, and crushed chili peppers until a smooth paste is formed. Add lemon juice and stir to combine. Spoon this garlicky mixture evenly over the cooled and drained cauliflower. Cover with plastic wrap and refrigerate to marinate.
Step 3
Before serving, heat olive oil in a small skillet over medium heat. Add breadcrumbs and toast them until golden brown. Pour the toasted breadcrumbs over the cauliflower. Serve, optionally cutting the cauliflower into quarters at the table.
Step 4
Optionally, shave Parmesan, Asiago, or Romano cheese as an addition to the salad.
