  • 4 unit chilled iceberg or romaine lettuce leaves
  • 0.125 teaspoon salt and pepper
  • 4 unit pitted black olives, sliced
  • 2 tablespoons chopped scallion (green onion)
  • 2 tablespoons diced drained canned pimientos
  • 1/2 cup diced chilled celery
  • 8 ounces skinned and boned cooked chicken, chilled and diced
  • 2 teaspoons grated Parmesan cheese
  • 4 teaspoons mayonnaise
  • 1/2 unit garlic clove
  • 8 teaspoons lemon juice

Instructions

Step 1

Rub a medium wooden bowl with the cut side of a garlic clove, then discard the garlic.

Add lemon juice, mayonnaise, and grated Parmesan cheese to the bowl and stir to combine.

Add the pitted black olives, chopped scallion, diced drained canned pimientos, diced chilled celery, skinned and boned cooked chicken, salt, and pepper to the bowl and mix well.

Line a serving platter with lettuce leaves and top with the chicken mixture.
