Stuffed Okra

Ingredients

pound Fresh okra, whole
1 tablespoon Coriander, ground
1 tablespoon Cumin, ground
2 teaspoons Lemon juice
teaspoon Salt
1 small Onion, halved lengthwise & cut crosswise into fine half rings
6 tablespoons Vegetable oil

Preparation

Rinse okra & pat dry. Trim. In a small bowl, mix together the coriander, cumin, lemon juice, cayenne, salt & black pepper.

One at a time, holding the okra in one hand, make a long slit in it using a sharp knife; don't go right through the pod & leave 1/4" at either end. Press the stuffing into the slit. Stuff all the okra pods this way.

Over a medium-high heat, heat the oil in a frying pan large enough to hold the okra in a single layer. Put in the onion & stir fry until it just begins to brown. Put in the okra in a single layer & reduce heat to medium-low. Okra should cook slowly, uncovered. Gently turn the pods until all sides are golden & very lightly browned, about 15 minutes. Cover pan, reduce heat to low & simmer for 5 minutes.
