  • 1 pound Fresh okra, whole
  • 1 tablespoon Coriander, ground
  • 1 tablespoon Cumin, ground
  • 2 teaspoon Lemon juice
  • teaspoon Cayenne pepper
  • teaspoon Salt
  • Black pepper
  • 1 small Onion, halved lengthwise & cut crosswise into fine half rings
  • 6 tablespoon Vegetable oil

Step 1

Rinse okra and pat dry. Trim. In a small bowl, mix together the coriander, cumin, lemon juice, cayenne, salt and black pepper.

One at a time, holding the okra in one hand, make a long slit in it using a sharp knife; do not go right through the pod and leave 1/4" at either end. Press the stuffing into the slit. Stuff all the okra pods this way.

20 minutes

Over a medium-high heat, heat the oil in a frying pan large enough to hold the okra in a single layer. Put in the onion and stir fry until it just begins to brown. Put in the okra in a single layer and reduce heat to medium-low. Okra should cook slowly, uncovered. Gently turn the pods until all sides are golden and very lightly browned, about 15 minutes. Cover pan, reduce heat to low and simmer for 5 minutes.
