Over a medium-high heat, heat the oil in a frying pan large enough to hold the okra in a single layer. Put in the onion & stir fry until it just begins to brown. Put in the okra in a single layer & reduce heat to medium-low. Okra should cook slowly, uncovered. Gently turn the pods until all sides are golden & very lightly browned, about 15 minutes. Cover pan, reduce heat to low & simmer for 5 minutes.
