Burmese Fried Rice

Ingredients

4 cups cold boiled rice
3 tablespoons cooking oil
1 cup (or more) sliced shrimp, cooked ham, 3 eggs
6 green onions, thinly sliced
3 tablespoons soy sauce
Salt (to taste)
1/2 teaspoon sugar

Preparation

Heat cooking oil in a large heavy bottom of electric skillet. Add the cold rice and cook for 10 minutes, stirring often. Add shrimp or other meat. Pour lightly beaten eggs over all. Cook, add salt (if used). Heat thoroughly, serve at once. Add onions, soy sauce, sugar, Sweet and Sour sauce, chutneys or a variety of other accompaniments, as cottage cheese, sliced tomatoes, etc. are good with this versatile main dish.
