  • 500 ml natural mango and passion fruit juice
  • 1 lime lime (for juice and zest)
  • 200 g sugar
  • 200 g honey(optional)
  • 200 ml water
  • 250 ml whipping cream

Step 1

Prepare the sugar syrup by heating the sugar (or honey) and water in a saucepan until dissolved. Let it cool down, or cool it rapidly in a bowl placed over ice cubes.

4-5 hours

Once the syrup is cooled, mix it with the natural mango and passion fruit juice and whipping cream. Add the lime juice and grated zest. Place the mixture in a bowl and refrigerate for 4-5 hours to chill thoroughly.

10-12 hours

Ensure the ice cream machine bowl has been placed in the freezer for 10-12 hours prior to preparing the ice cream.

30 minutes

On the next day, remove the frozen ice cream machine bowl and the chilled mixture. Turn on the ice cream machine and pour the mixture into its churn. Churn for 30 minutes until the ice cream is ready to serve.

Step 5

Serve the ice cream in cups, optionally garnished with mango slices and additional lime zest.
