  • French bread slices or crackers(optional)
  • fresh oregano sprigs(optional)
  • dried tomato slivers(optional)
  • 1/2 cup dried tomatoes in oil, drained, chopped
  • 1/4 cup basil pesto
  • 1/8 teaspoon freshly-ground black pepper
  • 4 teaspoon chopped fresh oregano
  • 1 1/4 teaspoon dried oregano(optional)
  • 2 cloves garlic, minced
  • 8 ounce goat cheese
  • 2 package 8 ounce cream cheese, softened

In a food processor, combine goat cheese, cream cheese, freshly-ground black pepper, chopped fresh oregano (or dried oregano if substituting), and minced garlic. Process until smooth to create the cheese mixture. Line an 8- by 4-inch loaf pan with plastic wrap. Spread one-third of the cheese mixture into the bottom of the pan. Top this layer with the basil pesto. Spread another one-third of the cheese mixture over the pesto. Sprinkle with the chopped dried tomatoes. Top with the remaining cheese mixture. Cover the loaf pan and chill for 8 hours.

Invert the chilled spread onto a serving plate and discard the plastic wrap. Garnish as desired (see step 3). Serve with French bread slices or crackers.

To garnish, cut one dried tomato into slivers. Gently press fresh oregano sprigs and the prepared tomato slivers in a decorative pattern over the top of the inverted cheese spread.
