Elderflower Syrup & Cordial

Elderflowers or fiori di sambuco are in bloom in Italy! This flower from the elderberry tree makes a lovely light floral lemonade-like flavored syrup to be added to drinks (sparking water, vodka, gin or grappa), desserts or sorbets - depending on your mood. It makes an amazing vinegerette over salad as well! This can be served along breakfast, brunch, lunch or dinner - perfect a for hot summer's day!

Ingredients

  • 60 grams citric acid
  • 1.8 liters water
  • 1.5 kilograms sugar
  • 4 lemons, sliced
  • 20 elderflower heads

Instructions

Step 1

Bring the sugar and water to a boil in a pot, stirring occasionally until the sugar is completely dissolved.

36-48 hours

Once the sugar-water has cooled, pour it along with the citric acid, sliced lemons, and elderflower heads into a large jar. Cover the jar and let it steep for 36 to 48 hours, stirring occasionally.

After steeping, remove the lemons and elderflowers from the jar. Strain the liquid a few times, using a cheesecloth for better clarity if available.

3-5 minutes

Pour the strained syrup into a clean pot and cook for 3 to 5 minutes.

until cool

Carefully pour the hot syrup into clean, sterilized glass bottles. Seal the bottles and let them cool completely before transferring them to the refrigerator. When properly sealed, the syrup will keep for almost a year in the refrigerator.

To serve, mix 1 to 3 tablespoons of the syrup with water or seltzer in a pint glass. Alternatively, add 1 tablespoon of syrup to a couple shots of vodka or gin.
