  • 1 cup butter
  • 3/4 cup packed brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons maple syrup
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 pound bacon

Cook the bacon until crispy. Drain on a paper towel, then crumble once cooled.

Preheat the oven to 375 degrees F.

Beat together the butter, brown sugar, and granulated sugar in a large mixing bowl until fluffy.

Add the eggs one at a time, then add the maple syrup. Beat for 1 more minute until well combined.

In a separate bowl, combine the flour, baking soda, and salt.

Gradually stir the dry ingredients into the wet mixture in 3 stages until just incorporated. Do not overmix, or the batter will become tough.

Stir in the crumbled bacon pieces.

Drop the cookie dough by tablespoons onto cookie sheets.

Bake at 375 degrees F for 8-10 minutes, or until the edges are golden brown.
