Thai Meat Salad
Ingredients
1/4 cucumber, cut in matchsticks
1 1/2 cups thinly sliced sweet onion
2 tablespoons soy sauce
2 tablespoons lemon or lime juice
2 tablespoons rice vinegar
3/4 teaspoon fresh minced hot chili
1/2 tablespoon minced garlic
2 tablespoons peanut oil
1 tablespoon grated or minced fresh ginger
2 tablespoons olive oil
1 teaspoon black sesame seeds
12 fresh cilantro sprigs

Roast meat. Combine soy, juice, vinegar, chili, garlic, oils and ginger. Thinly slice meat into bite size pieces. Dress with 1/2 salad dressing. Dress greens with remaining dressing. Arrange greens on plates and divide meat among plates. Garnish with black sesame seeds and cilantro. Available in oriental markets.
