- 8 medium potatoes
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped peppers, any kind
- 1 large garlic clove, grated
- 1/2 cup favorite cheese
- 1/3 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter, soft
- 1 tablespoon finely chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground turmeric
- 2 tablespoons olive oil
Instructions
Step 1
Scrub the potatoes well and dry them off.
Step 2
Bake the potatoes at 425°F for 45 minutes. Check if they are done by inserting a knife into the potato; if the knife slides in easily, the potatoes are done.
Step 3
Pull the potatoes out of the oven and let them cool for 10 minutes to handle them easily.
Step 4
Remove the top skin from each potato, scoop out the potato meat into a bowl, and mash it.
Step 5
Add salt, pepper, ground turmeric, grated garlic, sour cream, cheese, chopped onion, and chopped parsley to the mashed potatoes, then mash to combine thoroughly.
Step 6
Spoon the potato mix back into the potato skins.
Step 7
Smother the filled potato skins with olive oil and place them on a baking sheet.
Step 8
Sprinkle some more cheese over the top of each potato.
Step 9
Bake for 15 minutes in a 425°F preheated oven.
