Sweet Potato Pudding

Ingredients

3 cups cooked yams
3 tablespoons butter, melted
1/2 teaspoon salt
1/4 cup orange juice
1 (8-9 oz.) can crushed pineapple, drained
Miniature marshmallows

Preparation

Mash yams. Add butter, salt, and orange juice. Beat until light and fluffy with mixer. Add pineapple. Place in 1 1/2 quart casserole and dot top with butter. Bake 15 minutes at 350 degrees. Then top with marshmallows and bake until brown, about 15 minutes more. Serves 6.
