Portuguese Tuna and Bean Salad

Ingredients

handful of parsley
1/2 onion
some lettuce-of your choice
small plum tomatoes-of your choice
extra extra virgin olive oil
Mixed dried herbs
salt and pepper to taste

Preparation

Boil the beans for two hours with no seasoning

Drained and cooled them well

Add the raw onion, parsley, tuna, lettuce, tomatoes, dried herbs and boiled eggs

Season with salt and pepper

Drizzle with olive oil and white wine vinegar

Coat it all well and sprinkle with some chopped parsley

Sit down and thoroughly enjoy the flavours!

About

Found some lovely black eyed beans today which took me straight into Portuguese Childhood flavour mode.

Portuguese people love their legumes.

This salad works well with chickpeas too.
