Portuguese Tuna and Bean Salad
Found some lovely black eyed beans today which took me straight into Portuguese Childhood flavour mode. Portuguese people love their legumes. This salad works well with chickpeas too.

- 1 pound black eyed beans
- 1 can tuna
- 2 hard boiled eggs
- handful fresh parsley
- 0.5 onion
- lettuce(optional)
- small plum tomatoes(optional)
- extra virgin olive oil
- white wine vinegar
- lemon juice(optional)
- mixed dried herbs
- salt
- pepper
Instructions
Step 1
Boil the black eyed beans for two hours without seasoning.
Step 2
Drain and cool the cooked beans thoroughly.
Step 3
In a large bowl, combine the drained and cooled beans with the raw onion, parsley, tuna, lettuce, tomatoes, dried herbs, and sliced hard-boiled eggs.
Step 4
Season the salad with salt and pepper to taste.
Step 5
Drizzle with olive oil and either white wine vinegar or lemon juice.
Step 6
Mix all ingredients well to coat, then sprinkle with additional chopped parsley.
