- 6 slices Bacon (chopped & cooked to crisp)
- 1 can 8 ounce Crushed Pineapple
- 1 can 8 ounce Pineapple Tidbits (drained & reserve the juice)
- 2 cups Bisquick Mix
- 1 Egg
- 2 tablespoons Oil
- 1 1/3 cups Milk
Instructions
Step 1
In a saucepan, place the crushed pineapple and simmer until warm and thick. This will be the topping for the waffles.
Step 2
In a mixing bowl, combine the Bisquick mix, egg, oil, and 1 1/3 cups of liquid. To prepare the liquid, use the reserved pineapple juice from the tidbits can, then add enough milk to reach the total of 1 1/3 cups. Stir well to combine and make a lump-free batter.
Step 3
Heat a waffle iron. Once ready, spray with non-stick cooking spray. Ladle in the batter and spread it around evenly. Top with some of the cooked bacon and pineapple tidbits. Lower the lid and cook until golden brown.
Step 4
To serve, place a cooked waffle on a plate. Spoon some of the reduced crushed pineapple topping into the center of the waffle and garnish with a few pieces of the cooked bacon.
