- 5 tablespoons lemon juice
- 2 cups confectioner's sugar
- 1 cup Egg Beaters 99% egg substitute
- 3/4 cup water
- 1/4 cup applesauce
- 1 packet lemon gelatin powder
- 1 packet cake mix
Instructions
Step 1
Spray a 9 x 13 inch pan with pan coating. In a large bowl, mix the lemon gelatin powder with the cake mix. Add water, applesauce, and Egg Beaters, then beat until a smooth batter forms. Pour the batter into the prepared pan and bake at 350°F for 25 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool for five minutes.
Step 2
While the cake cools, mix together the confectioner's sugar and lemon juice to create an icing. Prick the cake all over with a fork and pour the icing over the top.
Step 3
To serve, cut the cake into squares and top with whipped topping.
Step 4
Use yellow cake mix. Three cups of homemade cake mix can be substituted for one package of commercial cake mix.
