This is a family favorite, child friendly and can be ramped up with hot peppers or other heat inducing extras, if your family likes that sort of thing. Make two and freeze the second one for later.

  • 10 tortillas flour tortillas
  • 2 cup cooked chicken
  • 3 cup cooked rice
  • 1 tablespoon taco seasoning(optional)
  • 1 can 3 oz tomato paste
  • 1/2 cup plain yogurt or sour cream(optional)
  • 1 cup shredded cheese(optional)

Step 1

In large bowl, combine rice, chicken, <a href="/MYJ2HRB7">seasoning</a>

In 2 cup <a href="/PPPKH5Q4">measuring </a>cup, place tomato paste and fill to 2 cup line with <a href="/FVYNJCCW">warm </a>water. <a href="/7S3QCKWK">Mix </a>to combine.

Pour into rice mixture, reserving 1/2 cup

Fill tortillas and <a href="/LTNN8R88">roll </a>them tightly. Line them up in a 9 X 13 cake pan. They should fit tightly.

Pour the reserved tomato paste and water mixture over the center of the tortillas.

Cover with foil and <a href="/RNT367Z2">bake </a>at 350 degrees for 45 minutes or <a href="/XZFHRHHF">heated </a>through.

Optionally, remove foil, and add 1 cup <a href="/6WV3NY64">shredded cheese </a>over <a href="/R34ZSY3M">top </a>during last 15 minutes of cooking
