This recipe if from Bill Granger.Bill’s recipe uses cup measurement but I have converted to standard unit measurements .There are 3 stages to go through but worth it

- 120 gram butter
- 30 gram castor sugar
- 115 gram flour
- 50 ml fresh milk
- 1 egg egg
- 1 teaspoon vanilla essence
- 1 teaspoon baking powder
- 200 gram strawberry jam
- 100 gram unsalted butter
- 2 eggs eggs
- 150 gram sugar
- 100 gram desiccated coconut
- 35 gram flour

Base:

Add in egg and vanilla essence and <a href="/3CYMY2D7">beat </a>further.

<a href="/8M4FMXQ6">Fold </a>in the flour and milk alternatively into the batter bit by bit .

Grease a pan with parchment paper for easy handling.

Spread the base mixture in the pan.

Spread the strawberry jam on the base.

Add in eggs one at a time.

Do not spread it because then the jam will <a href="/7S3QCKWK">mix </a>in with the coconut mixture.
