Ingredients
4 ounces (6 each)
salmon
fillets
salt
and pepper
vegetable
oil
cilantro-Pesto
Cilantro-Pesto
1 cup fresh
cilantro
leaves
5 tablespoons
olive oil
4 tablespoons
white cooking
wine
3 tablespoons
parmesan
cheese,grated
2 tablespoons
almonds,
slivered
2
cloves
garlic
1/8 teaspoon
salt
Preparation

Season
salmon
fillets
with
salt
and pepper to
taste.

In a wide
skillet,
heat
vegetable oil, around 2-3 tablespoons.

Cook salmon
skin
side up until golden, around 3 to 4 minutes.

Transfer to an oven-safe
baking
dish.
Bake
at 375 F until cooked through, around 8 to 10 minutes.

Transfer to
serving
plates.
Drizzle with cilantro-pesto.

Puree
all ingredients in
blender,
pulse first until finely chopped, then
puree,
scraping frequently until smooth
