  • 2 cup Rice Krispies cereal
  • 1 1/2 tablespoons Margarine or butter
  • 4 cup nonfat granola
  • 4 cup miniature marshmallows
  • 2 tablespoons peanut butter(optional)
  • 2 tablespoons miniature chocolate chips(optional)
  • dried fruits(optional)

Step 1

Put marshmallows in a glass mixing bowl. Microwave on high for 45 seconds. Stir and add butter or margarine. Microwave for 45 seconds longer and stir. If margarine or marshmallows are not completely melted, microwave for 30-45 seconds more. Stir in granola and Rice Krispies. Spray a 13"x9"x2" pan with nonstick spray. Using a large piece of wax paper, press the granola mixture evenly into the pan. Refrigerate. When ready to serve, cut into 14 bars.

VARIATION: For peanut butter granola bars, add 2 tablespoons of peanut butter to the marshmallows instead of the margarine/butter.

VARIATION: If you want commercial-style granola bars, add 2 tablespoons of miniature chocolate chips. If doing this, add cereals and chocolate chips after allowing the marshmallow mixture to cool for a few minutes.

VARIATION: You can optionally add more dried fruits with the cereals.
