- 1/2 cup sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon grated lemon zest
- 6 cup fresh peach slices (peeled)
- 6 cup frozen peach slices (thawed)(optional)
- 1 tablespoon fresh lemon juice
- 2 cup all-purpose flour
- 1/2 cup plus 2 tablespoons sugar, divided
- 2 teaspoons baking powder
- 3/4 cup cold butter, cut into small pieces
Instructions
Step 1
Preheat oven to 425 degrees F.

Grease a 9-inch baking dish.

For the filling: In a large bowl, mix 1/2 cup sugar, 1 tablespoon all-purpose flour, cinnamon, and lemon zest. Add peach slices and lemon juice; combine well. Pour the mixture into the prepared baking dish.

Bake the filling until bubbly.

For the topping: In a medium bowl, combine 2 cups all-purpose flour, 1/2 cup sugar (from the 'divided' portion), and baking powder. Mix well. Cut in the cold butter with a pastry blender or two knives until coarse crumbs form. Add 1/2 cup water, stirring just until the dry ingredients are moistened.
Step 6
Remove the dish from the oven. Drop the topping dough by heaping tablespoonfuls onto the peach filling. Sprinkle the remaining 2 tablespoons of sugar (from the 'divided' portion) over the top of the dough.

Bake until the topping is golden brown.
